WHY TURKEY RED?
Turkey Red is a heritage hard red winter wheat treasured by artisan and sourdough bakers for its rich, nutty flavor, strong baking performance, and naturally high protein—typically around 14%.
Freshly milled, it produces beautifully aromatic whole-grain flour with the strength and character needed for rustic sourdough loaves, sandwich bread, pizza dough, rolls, and more.

A WHEAT WITH A STORY
Brought to America by Mennonite families in the late 1800s, Turkey Red helped establish the Great Plains as America’s breadbasket. Although eventually displaced by modern commercial varieties, it remains prized by bakers who value exceptional flavor, strong wheat genetics, and a direct connection to how their food was grown.
We planted Turkey Red because we wanted to grow the kind of wheat we felt confident feeding our own family. Today, we’re honored to share that same harvest with yours.
HOW TO USE
Mill the berries at home for the freshest possible whole-wheat flour. A grain mill produces the most consistent flour, but you can also grind small batches in a high-powered blender—no dedicated mill required to get started.
The whole berries can also be cooked and used in grain bowls, soups, salads, and other recipes.
